Cauliflower is replacing rice, zucchini is replacing noodles! All of these are great ways to improve your way of eating.
Keeping it simple this post, check out user Keith's share how he cooked lasagna using zucchini sliced instead of noodles and reheating the next day in the Hot Logic.
Many versions of this recipe have been shared either in rolls or a lasagna dish. Some prep will be required to assemble but can easily precook the meat and assemble with the vegetables. Prepare day of or assemble and freeze or keep for the next day.
Side note: zucchini gives off a lot of water so it can be slightly precooked and set on paper towel to soak up the water it gives off. Extra water while cooking in the hot logic can quickly add too much liquid to your container.
Any lasagna recipe will work for this recipe and all of them can vary. Use turkey, pork sausage or beef, same with cheeses. Vary whatever you want in the recipe to fit your dietary needs.
